Prodotta con carne di suini Calabresi, sale e peperoncino dolce rosso esternamente.
La Pancetta calabrese si produce utilizzando il sottocostato inferiore e la cotenna dei suini nati ed allevati nella regione. E’ una pancetta tesa, nel senso che si presenta nella tipica forma rettangolare perchè non viene arrotolata. Viene mescolata con spezie naturali quali il peperoncino rosso in polvere, il pepe nero in grani e bagnata con aceto di vino.
